Private Le Creuset Stoneware Sale at The Pie Academy

Just in time to get a jump on your holiday shopping, it’s my special offering of Le Creuset Stoneware for Pie Academy members. Part of me wants to say it’s fine if you don’t order any of these irresistible products because then I can keep them all to myself. But I already own about fifty pieces and my wife would club me if the thought so much as entered my mind.

Please know that quantities on these items are very limited. On some, I only have one or two and probably won’t replace them until after the first of the year. (NOTE: some of the Kiwi items in the photo above are sold out.) In other words, act quickly if you see something you like. The No-More-Tears Pie Pastry Course

LARGE (10”) PIE PLATE

Outsized and substantial, this is my pan of choice when I’m baking a pie to feed a crowd or for a special occasion. It’s called a 10” pan, but – in fact – it measures nearly 12” across from edge to edge. When you bring a pie to the table in this pan, a chorus of ooohs and aaahs erupt. Because of the generous size, I have a scaled-up pie dough recipe I send with each order. You may have to play around with your fillings to get just the right amount. I typically scale mine up by about 50%.

TART DISH (9”)

I bake a ton of quiches and other savory pies over the holidays. Sweet ones, too. Sometimes I’ll use my metal tart pans with the removable bottoms. But it’s usually easier just to bake them in this fetching Stoneware tart dish. Like the pie plate, this is a weighty pan with sides about 1 1/4” high. I’ll often beef up the sides and make them a little higher to accommodate plenty of filling. This pretty fluted dish always adds just the right touch of elegance at the brunch or dinner table.

TART DISH (12”)

Do you regularly prepare quiche or big fruit tarts for a crowd? Would you like to? Then this monster needs to find a home in your kitchen. It’s the big brother of the 9” TART DISH and first cousin to the LARGE PIE PLATE, which has roughly the same capacity. Available only in black, this dish looks as classy at a formal setting as it does comfortable at a potluck dinner.

PETITE PIE DISH (4 1/2”)

These are my go to dishes for individual pot pies, pot pies being one of the best reasons I can think of to be alive. They’re no slouch in the sweet pie department, either. But I don’t wait around for pie time to press them into service: little cheesecakes, custards, condiments, leftovers, portions of this and that for opposite ends of the table, these multi-service pieces will get a real workout in your kitchen. SQUARE BAKING DISH (5”x5”)

Okay, so they’re a little too big for an individual pie and too small for a family size casserole, but I still use these all the time. Like when I’m making a lasagna, shepherd’s pie, or even a cobbler and I’ve got enough ingredients leftover for a two portion serving I want to freeze for later. A natural for hot crab dip, I put out nuts, olives, and crackers in these around the holidays, and berries in the summer. Another multi function hero, this one is. Sold only in sets of 2.

LARGE MULTI BOWL (Nearly 9” across and 5” tall)

This bowl could easily become your default choice for so many of your kitchen tasks, from mixing up a batch of pie dough to making pancake batter. (I guess that’s why they call it the Multi Bowl.) The weight helps keep it steady on your work counter, and I love the way the black – the only color I have in stock – looks next to some of my more colorful bowls.

PIE BIRDS

Can you imagine one of these pie birds singing away in the center of your double crust fruit pies? How cool would that be? It makes a whimsical steam vent, the shoulders help support the crust, and it looks just plain cute all at once.
